Ingredients
- 2 medium zucchinis, sliced into ¼-inch thick rounds
- 2 tbsp olive oil
- ½ cup freshly grated Parmesan cheese
- ¼ tsp garlic powder
- ¼ tsp Italian seasoning (optional)
- Salt and freshly ground black pepper, to taste
- Fresh chopped parsley for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C).
- Wash and dry zucchini, then slice into uniform rounds.
- In a bowl, toss zucchini with olive oil, garlic powder, Italian seasoning, salt, and pepper.
- Arrange rounds on a parchment-lined baking sheet in a single layer.
- Sprinkle Parmesan over each slice, pressing lightly.
- Bake for 20–22 minutes (or air fry 10–12 minutes), until golden and crispy.
- Broil for 1–2 minutes at the end if extra crisp is desired.
- Let cool slightly, garnish with parsley, and serve warm.
