Description

Golden brown, cheesy, and crisp on the outside with tender zucchini on the inside—this snackable side dish is irresistibly good and quick to make. Perfect for low-carb diets, party platters, or just healthy snacking.


Ingredients

  • 2 medium zucchinis, sliced into ¼-inch thick rounds
  • 2 tbsp olive oil
  • ½ cup freshly grated Parmesan cheese
  • ¼ tsp garlic powder
  • ¼ tsp Italian seasoning (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh chopped parsley for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C).
  2. Wash and dry zucchini, then slice into uniform rounds.
  3. In a bowl, toss zucchini with olive oil, garlic powder, Italian seasoning, salt, and pepper.
  4. Arrange rounds on a parchment-lined baking sheet in a single layer.
  5. Sprinkle Parmesan over each slice, pressing lightly.
  6. Bake for 20–22 minutes (or air fry 10–12 minutes), until golden and crispy.
  7. Broil for 1–2 minutes at the end if extra crisp is desired.
  8. Let cool slightly, garnish with parsley, and serve warm.
