Ingredients
- 2 boneless, skinless chicken breasts (sliced horizontally into cutlets)
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 3/4 cup breadcrumbs (Italian-style or panko)
- 1/2 cup finely grated Parmesan cheese
- Salt and black pepper, to taste
- 2 tablespoons olive oil (for frying)
- 3 tablespoons butter
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons chopped fresh parsley (plus more for garnish)
Instructions
- Slice chicken breasts horizontally and pound to even thickness. Season both sides with salt and pepper.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan.
- Dredge each piece of chicken in flour, then dip in egg, and coat in the breadcrumb-Parmesan mixture.
- Heat olive oil in a large skillet over medium heat. Fry chicken 4–5 minutes per side until golden brown and cooked through. Remove and drain on paper towels.
- In a separate pan, melt butter and sauté garlic for 1–2 minutes over medium-low heat.
- Add chicken broth and bring to a simmer. Stir in heavy cream and reduce for 3–5 minutes. Season with salt, pepper, and parsley.
- Place chicken on a serving plate and spoon garlic sauce over the top. Garnish with more parsley.
