Ingredients

200g ground turkey (93% lean)

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 scallions, chopped

1 tablespoon soy sauce

1 teaspoon sesame oil

1/4 cup shredded cabbage or carrots (optional)

Salt and pepper to taste

10 rice paper wrappers

2 tablespoons neutral oil for frying


Instructions

1. In a bowl, combine ground turkey, garlic, ginger, scallions, soy sauce, sesame oil, salt, and pepper. Mix well. Fold in optional shredded veggies if using. Let sit for 10 minutes.

2. Fill a shallow dish with warm water. Dip one rice paper in water for 10 seconds. Place on a clean, damp surface.

3. Add 1 to 1.5 tablespoons of filling to the center. Fold the sides and roll like a burrito. Double wrap for extra crispiness if desired. Repeat with all wrappers.

4. Heat oil in a non-stick skillet over medium heat. Add dumplings seam-side down. Fry 3–4 minutes per side until golden and crispy.

5. Make dipping sauce (optional): mix 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sesame oil, chili flakes, and a bit of honey. Serve with dumplings.

Notes
