Ingredients

  • 2 medium zucchini, sliced into 1/4-inch rounds
  • 2 eggs, beaten
  • 1 cup breadcrumbs (panko or regular)
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste
  • Vegetable oil, for frying

Instructions

  1. Wash zucchini and pat dry. Slice into 1/4-inch rounds.
  2. Prepare three shallow bowls: one with flour (seasoned with salt and pepper), one with beaten eggs, and one with a mix of breadcrumbs, Parmesan, and garlic powder.
  3. Dredge zucchini slices in flour, then dip in egg, then press into breadcrumb mixture to coat.
  4. Heat about 1/2 inch of oil in a skillet over medium-high heat until hot (350°F/175°C).
