Ingredients

1 ½ cups fresh or frozen corn kernels

½ cup all-purpose flour

1 large egg

¼ cup milk

1 teaspoon baking powder

½ cup shredded cheddar cheese

2 green onions, chopped

23 tablespoons oil for frying


Instructions

1. If using fresh corn, cut kernels off the cob. Thaw and dry frozen corn or rinse and dry canned corn.

2. In a large bowl, whisk flour, baking powder, salt, and pepper.

3. In a separate bowl, beat the egg and milk together.

4. Pour wet ingredients into dry ingredients and stir until just combined.

5. Fold in corn, shredded cheese, and chopped green onions until evenly mixed.

6. Heat oil in a non-stick or cast-iron skillet over medium heat.

7. Drop 2 tablespoons of batter per fritter into the pan and flatten slightly.

8. Cook each side for 2–3 minutes or until golden and crispy.
