Ingredients
1.5 pounds baby or Yukon Gold potatoes
1/2 cup grated Parmesan cheese
2 tablespoons olive oil
2 teaspoons fresh thyme (or 1 teaspoon dried)
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
2. Halve the potatoes and parboil them in salted water for 8–10 minutes until just fork-tender.
3. Drain and let them steam dry for a few minutes.
