  • 8 ounces fettuccine or penne pasta
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup reserved pasta water (optional, for adjusting sauce consistency)
  • Fresh parsley, chopped (for garnish)



Instructions

  1. Prepare the Chicken: Slice the chicken breasts in half horizontally to create thinner cutlets. Pat dry and season both sides with salt, pepper, garlic powder, and paprika.
  2. Bread the Chicken: Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with Parmesan cheese. Dredge each chicken piece in flour, dip in egg, then coat with the breadcrumb mixture, pressing to adhere.
  3. Cook the Chicken: Heat olive oil and butter in a large skillet over medium heat. Cook the breaded chicken for 4-5 minutes per side until golden brown and crispy. Transfer to a plate lined with paper towels and set aside.
  4. Boil the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water before draining.

  7. Combine the Pasta: Add the cooked pasta to the sauce and toss to coat evenly. Let simmer for 1 minute to absorb the flavors.
