Ingredients

1 ½ cups cooked shredded chicken

1 ½ cups shredded cheddar cheese

½ cup diced red bell pepper

¼ cup finely chopped red onion

2 tablespoons chopped fresh cilantro

1 tablespoon taco seasoning

1 tablespoon olive oil or butter (for pan-frying)

4 large flour tortillas


Instructions

1. In a large bowl, mix together the shredded chicken, taco seasoning, red bell pepper, red onion, and cilantro until well combined.

2. Heat a non-stick or cast-iron skillet over medium heat and lightly coat with olive oil or butter.

3. Place one tortilla on a flat surface. On one half, layer shredded cheese, chicken mixture, and a bit more cheese. Fold over to form a half-moon.

4. Cook the quesadilla in the hot skillet for 2–3 minutes per side, pressing gently with a spatula, until golden and crispy.

5. Remove from heat, let rest for 1 minute, then slice into wedges and serve warm with your favorite dips.

Notes

For the crispiest tortilla, use medium heat and cook slowly to avoid burning.

Pre-shredded cheese works, but shredding your own melts better and tastes fresher.

Let the quesadilla rest before slicing to prevent cheese from spilling out.
