Ingredients
2 large chicken breasts
2 tablespoons Cajun seasoning

8 ounces rotini pasta
1 cup heavy cream
1 cup freshly grated Parmesan cheese
2 cloves garlic, minced
1 cup roasted corn (frozen, canned, or fresh)
2 tablespoons butter
Salt, to taste
Black pepper, to taste
2 tablespoons chopped fresh parsley (optional)
Instructions
1. Cut chicken breasts into bite-sized chunks and toss with Cajun seasoning, olive oil, salt, and black pepper. Let marinate for 15–20 minutes.
2. Heat a large skillet with oil over medium-high heat. Sear chicken in batches, cooking for 3–4 minutes per side until crispy and blackened. Remove and set aside.
3. Boil rotini pasta in salted water according to package directions until al dente. Drain, reserving 1 cup of pasta water.
4. In the same skillet, melt butter and sauté minced garlic for 30 seconds until fragrant.
5. Pour in heavy cream and bring to a gentle simmer. Stir in Cajun seasoning and Parmesan cheese until melted and smooth.
6. Add roasted corn to the sauce and simmer for 2–3 minutes. If needed, add reserved pasta water to loosen the sauce.
7. Toss cooked pasta into the sauce, stirring until evenly coated.

Notes
