No deep frying needed, just a sheet pan, a few pantry spices, and fresh cauliflower. Paired with a creamy, zesty garlic dipping sauce, this easy recipe will satisfy cravings while keeping things light. It’s one of those versatile food ideas that works any time of day—from lunch to late-night munching.

Ingredients

1 medium head cauliflower, cut into florets

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

0.5 teaspoon salt

0.25 teaspoon black pepper

0.5 cup plain Greek yogurt or mayonnaise

1 clove garlic, minced

1 tablespoon lemon juice

1 tablespoon water (optional, to thin sauce)

1 tablespoon chopped fresh parsley (optional)

Instructions

1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.

2. Wash and thoroughly dry the cauliflower. Cut it into evenly sized florets for consistent roasting.

3. In a large bowl, toss the cauliflower with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.

4. Spread the florets in a single layer on the baking sheet without overcrowding.

5. Roast for 25–30 minutes, flipping halfway through, until golden brown and crisp.

6. While the cauliflower roasts, whisk together the Greek yogurt or mayo, minced garlic, lemon juice, and water (if needed) to create a smooth dipping sauce.

7. Chill the sauce until ready to serve.

8. Remove cauliflower from the oven, let cool slightly, then serve with garlic sauce and garnish with parsley if desired.

Notes

Make sure the cauliflower is fully dry before roasting to achieve maximum crispiness.

You can easily double the recipe—just use two trays to avoid crowding.

Add chili flakes or cayenne to the seasoning mix if you like a spicy kick.
