12 oz penne pasta
1 lb ground beef
1 tbsp olive oil
1 red bell pepper, diced
3 cloves garlic, minced
½ small onion, finely chopped
8 oz Velveeta cheese, cubed
1 cup heavy cream
½ cup whole milk
¼ cup grated Parmesan cheese
2 tbsp cream cheese
1½ tsp Cajun seasoning
½ tsp smoked paprika
½ tsp black pepper
¼ tsp salt
Pinch red pepper flakes (optional)
Chopped fresh parsley (optional garnish)
Extra Parmesan or shredded cheese (optional garnish)
Instructions
1. Boil a large pot of salted water and cook penne pasta until al dente. Reserve ½ cup pasta water, then drain and set aside.
2. In a deep skillet over medium-high heat, add olive oil and brown the ground beef. Season with a pinch of salt and pepper. Once fully cooked, transfer to a plate.
3. In the same skillet, sauté diced red bell pepper and onion until softened, about 3–4 minutes. Add garlic and cook for 30 seconds more.
4. Pour in the heavy cream and milk. Add cream cheese and Velveeta cubes. Stir over low heat until melted and smooth.
5. Add Cajun seasoning, smoked paprika, red pepper flakes (if using), and Parmesan. Stir until combined.

7. Add cooked penne to the sauce. Toss gently until fully coated. Add pasta water as needed to loosen sauce.
