Ingredients
12 oz spaghetti
2 cups cooked chicken, shredded
8 oz Velveeta cheese, cubed
1 ½ cups shredded mozzarella cheese
3 tbsp unsalted butter
4 cloves garlic, minced
1 ½ cups heavy cream
½ cup chicken broth
½ tsp salt (or to taste)
¼ tsp black pepper (or to taste)
1 tsp Italian seasoning (optional)
¼ tsp crushed red pepper flakes (optional)
2 tbsp chopped fresh parsley (for garnish)
2 tbsp grated Parmesan cheese (optional, for topping)
Instructions
1. Bring a large pot of salted water to a boil and cook spaghetti until just shy of al dente. Drain and reserve ½ cup of pasta water.
2. In a large skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1–2 minutes.
3. Pour in heavy cream and chicken broth. Simmer for 3–4 minutes to reduce slightly.
4. Lower heat and stir in cubed Velveeta until melted and smooth. Add mozzarella and stir until fully melted.
5. Season with salt, pepper, Italian seasoning, and red pepper flakes if using.
6. Stir in the shredded chicken and fold in the cooked spaghetti until well coated. Add a splash of reserved pasta water if sauce is too thick.
7. (Optional) Transfer to a greased baking dish, top with more mozzarella or Parmesan, and bake at 375°F for 15–20 minutes until bubbly.
8. Garnish with parsley and serve hot.
Notes
Let Velveeta come to room temperature before adding—it melts faster and smoother.
Always cook cheese sauces on low heat to prevent curdling or separation.
Save your pasta water! It’s perfect for thinning the sauce without losing flavor.
