Ingredients

12 oz fettuccine noodles

1 lb boneless skinless chicken breast

1 tablespoon olive oil

2 tablespoons butter

4 garlic cloves minced

1 cup heavy cream

8 oz Velveeta cheese cubed

0.5 cup grated Parmesan cheese

0.5 teaspoon black pepper

0.25 teaspoon salt

1 teaspoon Italian seasoning (optional)

Fresh parsley (optional garnish)


Instructions

1. Bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente. Drain and set aside, reserving ½ cup of pasta water.

2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add cubed chicken, season with salt and pepper, and cook until golden and cooked through. Remove from skillet and set aside.

3. In the same skillet, melt butter over medium-low heat. Add minced garlic and sauté until fragrant, about 30 seconds.

4. Pour in the heavy cream and warm for 1–2 minutes. Add cubed Velveeta cheese and stir continuously until melted and smooth.

5. Stir in Parmesan cheese, black pepper, salt, and Italian seasoning if using. Let simmer for 2–3 minutes, stirring until thickened.

6. Add the cooked chicken and fettuccine to the sauce. Toss everything together. Add a splash of reserved pasta water if needed to thin the sauce.

7. Serve hot, garnished with chopped fresh parsley if desired.

Notes

Use freshly grated Parmesan for the smoothest, most flavorful sauce.

Cook the pasta just until al dente so it holds up in the sauce.

Keep the heat low when melting the Velveeta to avoid a grainy texture.
