Description

Creamy Tuscan Chicken is a rich, comforting, one-skillet dinner that tastes like something from a fine Italian restaurant. Juicy chicken breasts are seared until golden, then simmered in a velvety sauce with garlic, sun-dried tomatoes, fresh spinach, and parmesan. Perfect with pasta, rice, or crusty bread, this dish is easy enough for weeknights and elegant enough for entertaining.


Ingredients

4 boneless, skinless chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 tablespoon Italian seasoning

2 tablespoons olive oil (preferably from sun-dried tomato jar)

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped

2 cups baby spinach

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated parmesan cheese

1 tablespoon butter (optional)

Fresh basil or parsley for garnish (optional)


Instructions

1. Pat chicken dry and season both sides with salt, pepper, garlic powder, and Italian seasoning. Slice or pound if necessary to even out thickness.

2. Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 5–6 minutes per side until golden. Remove and set aside.

3. Lower heat to medium. Add minced garlic and sauté for 30 seconds until fragrant. Stir in sun-dried tomatoes and cook for another minute.

4. Add spinach and cook until wilted.

5. Deglaze the pan with chicken broth, scraping up browned bits.

6. Pour in heavy cream and stir in parmesan cheese. Let simmer gently until thickened. Add butter for extra richness if desired.

7. Return chicken to skillet and simmer in sauce for 5–7 minutes, until fully cooked.

8. Garnish with fresh basil or parsley and serve hot with desired sides.

Notes

Leftover Creamy Tuscan Chicken can be refrigerated for up to 4 days. Reheat gently on the stove or in the microwave with a splash of cream or broth. The sauce may separate if frozen, so freezing is not recommended for best texture.
