Creamy Tuscan Chicken Pasta

Description

A luxurious, flavor-packed pasta dish featuring seared chicken in a creamy garlic-Parmesan sauce with sun-dried tomatoes and spinach. Perfect for a cozy dinner or an elegant meal for guests.


Ingredients

  • 2 large boneless, skinless chicken breasts, sliced into strips
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 10 oz penne pasta
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes, sliced
  • 2 cups baby spinach

Optional Garnishes:

  • Additional grated Parmesan
  • Fresh chopped parsley or basil

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup pasta water, drain, and set aside.
  2. Season chicken with Italian seasoning, garlic powder, salt, and pepper.
  3. In a large skillet, heat olive oil and butter over medium-high. Sear chicken 4–5 mins per side until golden and cooked. Remove and set aside.
  4. In the same skillet, reduce heat to medium. Sauté garlic for 30 seconds. Add chicken broth and scrape browned bits.
  5. Stir in heavy cream. Simmer gently. Add Parmesan and red pepper flakes, stir until melted.
  6. Add sun-dried tomatoes and spinach. Cook 1–2 mins until spinach wilts.
  7. Return chicken and pasta to skillet. Toss to coat. Use reserved pasta water to adjust sauce consistency.
  8. Taste and season as needed. Serve hot with extra Parmesan and herbs if desired.
