A luxurious, flavor-packed pasta dish featuring seared chicken in a creamy garlic-Parmesan sauce with sun-dried tomatoes and spinach. Perfect for a cozy dinner or an elegant meal for guests.
Ingredients
- 2 large boneless, skinless chicken breasts, sliced into strips
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 1 tbsp olive oil
- 1 tbsp butter
- 10 oz penne pasta
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/2 tsp red pepper flakes (optional)
- 1/2 cup sun-dried tomatoes, sliced
- 2 cups baby spinach
Optional Garnishes:
- Additional grated Parmesan
- Fresh chopped parsley or basil
Instructions
- Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup pasta water, drain, and set aside.
- Season chicken with Italian seasoning, garlic powder, salt, and pepper.
- In a large skillet, heat olive oil and butter over medium-high. Sear chicken 4–5 mins per side until golden and cooked. Remove and set aside.
- In the same skillet, reduce heat to medium. Sauté garlic for 30 seconds. Add chicken broth and scrape browned bits.
- Stir in heavy cream. Simmer gently. Add Parmesan and red pepper flakes, stir until melted.
- Add sun-dried tomatoes and spinach. Cook 1–2 mins until spinach wilts.
- Return chicken and pasta to skillet. Toss to coat. Use reserved pasta water to adjust sauce consistency.
- Taste and season as needed. Serve hot with extra Parmesan and herbs if desired.
