Ingredients

  • 2 large chicken breasts, sliced
  • 2 tbsp oil (from sun-dried tomato jar preferred)
  • Salt and pepper to taste
  • 8 oz penne pasta
  • 34 garlic cloves, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup chopped fresh parsley

Instructions

  1. Bring salted water to a boil and cook penne pasta until al dente. Reserve 1/2 cup of pasta water, drain, and set aside.
  2. Heat 2 tbsp oil in a large skillet. Season chicken with salt and pepper and sear on medium-high heat until golden and cooked through. Set aside.
  3. In the same skillet, reduce heat to medium. Add garlic and sauté for 30 seconds.
  4. Stir in chopped sun-dried tomatoes and cook for 1–2 minutes.
  5. Pour in cream, Italian seasoning, and red pepper flakes. Simmer for 3–4 minutes.
  6. Stir in Parmesan cheese and mix until the sauce becomes creamy.
  7. Add cooked chicken back into the sauce. Stir to coat.
  8. Toss in cooked pasta. Add a splash of reserved pasta water to loosen sauce if needed.
  9. Season with additional salt and pepper to taste. Garnish with chopped parsley.
