Ingredients
- 2 large chicken breasts, sliced
- 2 tbsp oil (from sun-dried tomato jar preferred)
- Salt and pepper to taste
- 8 oz penne pasta
- 3–4 garlic cloves, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional)
- 1/4 cup chopped fresh parsley
Instructions
- Bring salted water to a boil and cook penne pasta until al dente. Reserve 1/2 cup of pasta water, drain, and set aside.
- Heat 2 tbsp oil in a large skillet. Season chicken with salt and pepper and sear on medium-high heat until golden and cooked through. Set aside.
- In the same skillet, reduce heat to medium. Add garlic and sauté for 30 seconds.
- Stir in chopped sun-dried tomatoes and cook for 1–2 minutes.
- Pour in cream, Italian seasoning, and red pepper flakes. Simmer for 3–4 minutes.
- Stir in Parmesan cheese and mix until the sauce becomes creamy.
- Add cooked chicken back into the sauce. Stir to coat.
- Toss in cooked pasta. Add a splash of reserved pasta water to loosen sauce if needed.
- Season with additional salt and pepper to taste. Garnish with chopped parsley.
