Ingredients

1 lb Italian sausage (mild or hot)

1 cup ditalini pasta

1 medium yellow onion, chopped

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

3/4 cup grated Parmesan cheese

2 medium russet potatoes, peeled and diced

1 tablespoon olive oil

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper (or to taste)

2 tablespoons fresh parsley, chopped


Instructions

1. Heat a large pot over medium heat. Add olive oil and sausage. Cook until browned, breaking it into crumbles, about 6–8 minutes. Remove sausage and set aside.

2. In the same pot, add onion and sauté until translucent, about 4 minutes. Add garlic and cook for 30 seconds.

3. Add potatoes and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 10–12 minutes until potatoes are tender.

4. Stir in ditalini pasta. Simmer uncovered for 8–10 minutes until pasta is al dente.

5. Lower heat. Add heavy cream and grated Parmesan. Stir until cheese melts.

6. Return cooked sausage to the pot. Stir to combine and reheat gently.

7. Season with salt and pepper. Garnish with fresh parsley and extra Parmesan if desired.

Notes

Use freshly grated Parmesan for the best texture and flavor—pre-shredded often doesn’t melt as well.

For a lighter version, swap heavy cream with half-and-half or whole milk.

Pasta will soak up broth if stored; add extra broth or cream when reheating.
