Ingredients
1 lb chicken thighs or breasts
1 cup orzo pasta
3/4 cup grated Parmesan cheese
3 cloves garlic, minced
2 cups chicken broth
1/2 cup heavy cream
2 tbsp butter
1 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
2 tbsp chopped fresh parsley
1 tsp lemon zest or 1 tbsp lemon juice (optional)
Instructions
1. Pat chicken dry and season both sides with salt and pepper.
2. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken until golden and cooked through (about 5–7 minutes per side). Set aside.
3. In the same skillet, add garlic and sauté for 30 seconds to 1 minute.
4. Add orzo and stir to coat. Toast for 1–2 minutes.
5. Pour in chicken broth, bring to a simmer, and cook for 8–10 minutes until orzo is tender.
6. Reduce heat to low. Stir in cream and Parmesan until melted and creamy. Adjust seasoning.
7. Slice or cube cooked chicken and return to skillet. Stir to combine and warm through.
8. Finish with parsley and lemon zest or juice if using. Serve hot.
