Ingredients

12 oz rotini pasta

1 lb ground beef

2 tablespoons Cajun seasoning

8 oz Velveeta cheese, cubed

1 cup shredded mozzarella cheese

1/4 cup heavy cream (optional)

1 tablespoon chopped parsley (for garnish)

1 small red chili, diced (optional)

Salt and pepper, to taste

Instructions

1. Bring a large pot of salted water to a boil. Add rotini and cook until al dente. Drain and set aside, reserving a bit of pasta water.

2. In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat.

3. Add Cajun seasoning, salt, and pepper to the beef. Stir and cook for another 2–3 minutes to infuse flavor.

4. Reduce heat to low. Add cubed Velveeta cheese to the beef and stir until melted. Add a splash of cream or pasta water if needed.

5. Fold in shredded mozzarella until fully melted and stretchy.

6. Add cooked rotini and stir to coat everything evenly with the cheesy Cajun beef sauce.

7. Garnish with chopped parsley and diced red chili, if using. Serve hot and enjoy.

Notes

Use freshly shredded mozzarella for best melting texture.

Adjust Cajun seasoning to control spice level.

Add a splash of reserved pasta water to loosen the sauce if it thickens too much during reheating.
