1 lb chicken breasts, sliced thin

1 tablespoon olive oil

1 tablespoon butter

4 cloves garlic, minced

1 cup heavy cream

¾ cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

½ teaspoon salt

½ teaspoon black pepper

8 oz rotini pasta (or pasta of choice)

2 tablespoons chopped parsley (for garnish)


Instructions

1. Slice the chicken breasts in half lengthwise and season with salt, pepper, and Italian seasoning.

2. Heat olive oil and butter in a skillet over medium-high heat. Sear the chicken for 4–5 minutes per side until golden and cooked through. Set aside.

3. In the same pan, reduce heat to medium and add garlic. Sauté for 30–60 seconds until fragrant.

4. Pour in the heavy cream, scraping up brown bits from the pan. Simmer for 2–3 minutes.

5. Stir in grated Parmesan until melted and the sauce thickens. Taste and adjust seasoning.

6. Meanwhile, cook pasta in salted boiling water until al dente. Drain and reserve some pasta water.

7. Toss pasta into the sauce and mix well. Add a splash of pasta water if needed to loosen the sauce.

8. Slice the chicken and return to the pan or place on top. Garnish with chopped parsley and serve hot.

For best results, use freshly grated Parmesan—it melts better and keeps the sauce smooth.
