3 lbs Russet potatoes, peeled and chopped into chunks

1/2 cup grated Parmesan cheese

2 cloves garlic, minced (optional)

Salt and black pepper to taste

1/4 cup chopped fresh parsley (optional garnish)

Non-stick cooking spray or butter for greasing the baking dish


Instructions

1. Place the peeled and chopped potatoes in a large pot. Cover with cold water and add a generous pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain well.

2. Mash the hot potatoes using a masher or ricer until smooth. Avoid overmixing.

3. Add melted butter, warmed cream, and warmed milk to the mashed potatoes. Stir gently to combine.

4. Season with salt and pepper. Fold in 1 cup of shredded cheddar cheese, Parmesan cheese, and garlic if using.

5. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

6. Spread potato mixture evenly into the baking dish. Top with remaining 1/2 cup cheddar cheese.

7. Bake uncovered for 25-30 minutes or until golden and bubbly. Broil for 2-3 minutes for extra crispiness.

8. Remove from oven, let sit for 5 minutes, garnish with parsley, and serve warm.
