Ingredients

4 boneless, skinless chicken breasts

1 tablespoon olive oil

to taste salt and pepper

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper

4 tablespoons unsalted butter

5 cloves garlic, minced

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon red pepper flakes (optional)

1 teaspoon Italian seasoning

1/4 cup chopped fresh parsley

1/2 cup chicken broth

3/4 cup heavy cream


Instructions

1. Pat the chicken dry and season both sides with salt, pepper, paprika, garlic powder, and cayenne pepper. Let sit for 10–15 minutes.

2. Heat olive oil in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden and almost cooked. Remove and set aside.

3. Lower heat to medium. Melt butter in the same skillet, then add minced garlic. Cook for 1 minute. Stir in Dijon mustard, lemon juice, red pepper flakes, and Italian seasoning.

4. Deglaze with chicken broth, scraping up any browned bits. Simmer 2–3 minutes. Stir in heavy cream and bring to a gentle simmer.

5. Return chicken to skillet and spoon sauce over it. Cover and simmer 6–8 minutes until chicken reaches 165°F.

6. Garnish with fresh parsley and serve hot with your favorite side.

Notes

Let the chicken rest at room temperature before searing for even cooking.

Always deglaze the pan to add more flavor to the sauce.

Use heavy cream for best results; milk may curdle or thin out the sauce too much.
