Ingredients

1 lb chicken breast or thighs

8 oz mushrooms, sliced

1 small onion, diced

2 cloves garlic, minced

2 tbsp butter

2 tbsp all-purpose flour

1 cup chicken broth

1/2 cup sour cream

1/4 cup heavy cream (optional)

1 tsp Dijon mustard

1/2 tsp salt

1/4 tsp black pepper

2 tbsp chopped parsley (optional, for garnish)

8 oz egg noodles (or your preferred side)


Instructions

1. Slice chicken into bite-sized pieces, chop onions, and slice mushrooms. Prepare all ingredients before cooking.

2. In a large skillet, melt 1 tbsp butter over medium-high heat. Season chicken with salt and pepper. Sear chicken until golden and cooked through. Remove from skillet and set aside.

3. In the same skillet, melt the remaining 1 tbsp butter. Add mushrooms and onions. Sauté until softened and golden. Add garlic and cook for 1 minute.

4. Sprinkle flour over the vegetables and stir to coat. Cook for 1 minute.

5. Slowly whisk in chicken broth, scraping up any brown bits from the pan. Simmer until slightly thickened.

6. Reduce heat to low. Stir in sour cream, Dijon mustard, and heavy cream if using. Stir until smooth and creamy.

7. Return chicken to the skillet. Simmer for 5–7 minutes, letting the flavors meld.

8. Taste and adjust seasoning. Serve hot over noodles, rice, or mashed potatoes. Garnish with parsley.

Notes

Use room temperature sour cream to prevent curdling in the sauce.

For extra flavor, deglaze the pan with a splash of white wine before adding broth.

If sauce gets too thick, stir in a little extra broth or water to thin it out.
