Ingredients

2 boneless skinless chicken breasts

10 oz fettuccine pasta

1 cup heavy cream

1 cup grated parmesan cheese

4 garlic cloves, minced

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning

2 tablespoons chopped fresh parsley


Instructions

1. Bring a large pot of salted water to a boil and cook the fettuccine according to package directions until al dente. Reserve 1 cup of pasta water and drain the rest.

2. Pat chicken breasts dry and season both sides with salt, pepper, and Italian seasoning.

3. Heat olive oil in a skillet over medium-high heat. Sear the chicken 5–6 minutes per side until golden and cooked through. Remove and let rest, then slice into bite-sized pieces.

4. In the same skillet, reduce heat to medium. Add butter and stir in minced garlic. Cook for 1–2 minutes until fragrant.

5. Pour in heavy cream and let simmer for 3–4 minutes. Gradually add parmesan, stirring constantly until the sauce is smooth.

6. Add the cooked fettuccine to the skillet and toss to coat with sauce. Stir in sliced chicken. If the sauce is too thick, add a splash of reserved pasta water.

7. Let everything heat together for 2–3 more minutes.

8. Garnish with chopped fresh parsley and more parmesan if desired. Serve hot.

Notes

Use freshly grated parmesan cheese for best melting and texture.

Don’t skip reserving pasta water—it helps adjust the sauce perfectly.
