Ingredients
- 12 oz bowtie pasta (farfalle)
- 1 lb beef sirloin or tenderloin, cubed
- 2 tbsp olive oil
- Salt and black pepper, to taste
- 3 cloves garlic, minced
- 1 tsp red pepper flakes (optional)
- 1 cup heavy cream
- 1/2 cup beef broth
- 3/4 cup freshly grated Parmesan cheese
- 1 tsp Italian seasoning
- 1 tbsp unsalted butter
- Fresh parsley or thyme, for garnish
- Extra Parmesan, for topping
- (Optional) 1 small shallot, finely diced
- (Optional) 1 tsp cornstarch mixed with 2 tbsp cold water
- Reserved pasta water, as needed
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta until al dente. Reserve 1 cup of pasta water. Drain and set aside.
- Heat 1 tbsp olive oil in a large skillet over medium-high heat. Season beef with salt and pepper. Sear beef until browned on all sides (3–4 minutes). Remove and set aside.
- Lower heat to medium. Add remaining olive oil and butter. Sauté garlic (and shallots if using) for 1 minute.
- Pour in beef broth and simmer for 2 minutes, scraping up brown bits.
- Reduce heat to low. Stir in heavy cream, Parmesan, and Italian seasoning. Stir until smooth. Add pasta water as needed.
- Return beef to skillet. Simmer 2–3 minutes to finish cooking.
- Add cooked pasta and toss to coat evenly.
- Garnish with fresh herbs and extra cheese. Serve hot.
