Ingredients

  • 8 lasagna noodles, broken into bite-sized pieces
  • 1 pound ground beef or Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish



Instructions

  1. In a large pot, cook the ground beef or sausage over medium heat until browned. Drain excess grease.
  2. Add the diced onion and minced garlic, cooking until softened and fragrant.
  3. Pour in the chicken broth and Italian seasoning, bringing the mixture to a simmer.
  4. Add the broken lasagna noodles and cook until tender, stirring occasionally.
  5. In a separate saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute.
  6. Slowly whisk in the heavy cream until smooth, then add to the soup.
  7. Reduce heat to low and stir in the Parmesan and mozzarella cheese until fully melted and incorporated.
  8. Taste and adjust seasoning with salt, pepper, or red pepper flakes.
  9. Garnish with fresh parsley and serve warm.
