Ingredients
- 1 lb Italian sausage
- 1 medium yellow onion, chopped
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 jar (15 oz) Alfredo sauce
- 1 can (14.5 oz) diced tomatoes (with juice)
- 8 lasagna noodles, broken into pieces
- 3 cups baby spinach
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- Fresh basil (optional, for garnish)
Instructions
- In a large pot, heat olive oil and brown the Italian sausage. Remove and set aside.
- In the same pot, sauté the chopped onion until translucent, then add garlic and cook for another minute.
- Return sausage to the pot. Add chicken broth, Alfredo sauce, and diced tomatoes. Stir to combine.
- Bring to a gentle boil. Add lasagna noodles and cook for about 10 minutes, stirring occasionally.
- Lower the heat, then stir in baby spinach until wilted.
- Add mozzarella and Parmesan cheese, stirring until melted and smooth.
- Season with Italian seasoning, salt, and pepper. Garnish with basil if desired.
- Serve hot with garlic bread or salad.
