Description

This Creamy Alfredo Lasagna Soup takes all the comforting layers of lasagna and transforms them into a rich, cozy one-pot soup. With savory Italian sausage, tender lasagna noodles, creamy Alfredo sauce, and plenty of melty cheese, it’s a satisfying meal perfect for cold nights or easy family dinners.


Ingredients

  • 1 lb Italian sausage
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 jar (15 oz) Alfredo sauce
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 8 lasagna noodles, broken into pieces
  • 3 cups baby spinach
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • Fresh basil (optional, for garnish)

Instructions

  1. In a large pot, heat olive oil and brown the Italian sausage. Remove and set aside.
  2. In the same pot, sauté the chopped onion until translucent, then add garlic and cook for another minute.
  3. Return sausage to the pot. Add chicken broth, Alfredo sauce, and diced tomatoes. Stir to combine.
  4. Bring to a gentle boil. Add lasagna noodles and cook for about 10 minutes, stirring occasionally.
  5. Lower the heat, then stir in baby spinach until wilted.
  6. Add mozzarella and Parmesan cheese, stirring until melted and smooth.
  7. Season with Italian seasoning, salt, and pepper. Garnish with basil if desired.
  8. Serve hot with garlic bread or salad.
