Ingredients
- 1 bunch celery, chopped (include some leaves for added flavor)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 tablespoons butter or olive oil
- 2 tablespoons all-purpose flour (or gluten-free alternative)
- 4 cups vegetable or chicken broth
- 1 cup heavy cream or half-and-half (or dairy-free substitute)
- Salt and pepper, to taste
- Fresh herbs (like parsley or thyme), for garnish
- 1 tablespoon lemon juice (optional)
Instructions
- Prepare the vegetables by chopping the celery (including leaves), dicing the onion, and mincing the garlic.
- In a large pot, melt the butter over medium heat. Add the celery, onion, and garlic. Sauté for 5-7 minutes until the onion is translucent and the celery softens.
- Sprinkle the flour over the vegetables and stir constantly for 1-2 minutes to cook out the raw flour taste.
- Slowly pour in the broth, stirring to combine. Increase heat to bring to a gentle boil, then reduce to a simmer. Cook for 15-20 minutes or until the celery is completely tender.
- Use an immersion blender to blend the soup directly in the pot, or transfer in batches to a blender. Blend until smooth.
- Return the blended soup to the pot (if needed) and stir in the cream. Warm over low heat, but do not boil.
- Season with salt, pepper, and a splash of lemon juice if using. Garnish with fresh herbs before serving.
- Serve hot, with crusty bread or your favorite side.
