Ingredients

  • 1 bunch celery, chopped (include some leaves for added flavor)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 tablespoons butter or olive oil
  • 2 tablespoons all-purpose flour (or gluten-free alternative)
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or half-and-half (or dairy-free substitute)
  • Salt and pepper, to taste
  • Fresh herbs (like parsley or thyme), for garnish
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Prepare the vegetables by chopping the celery (including leaves), dicing the onion, and mincing the garlic.
  2. In a large pot, melt the butter over medium heat. Add the celery, onion, and garlic. Sauté for 5-7 minutes until the onion is translucent and the celery softens.
  3. Sprinkle the flour over the vegetables and stir constantly for 1-2 minutes to cook out the raw flour taste.
  4. Slowly pour in the broth, stirring to combine. Increase heat to bring to a gentle boil, then reduce to a simmer. Cook for 15-20 minutes or until the celery is completely tender.
  5. Use an immersion blender to blend the soup directly in the pot, or transfer in batches to a blender. Blend until smooth.
  6. Return the blended soup to the pot (if needed) and stir in the cream. Warm over low heat, but do not boil.
  7. Season with salt, pepper, and a splash of lemon juice if using. Garnish with fresh herbs before serving.
  8. Serve hot, with crusty bread or your favorite side.
