Ingredients

1 tablespoon olive oil

1 medium yellow onion, chopped

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups vegetable or chicken broth

1 cup heavy cream

10 ounces refrigerated cheese tortellini

2 cups fresh spinach

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried basil

1/2 teaspoon dried oregano

1/4 teaspoon red pepper flakes (optional)


Instructions

1. Heat olive oil in a large pot over medium heat. Add chopped onions and cook until soft and translucent, about 5 minutes. Stir in garlic and sauté for another 1-2 minutes.

2. Pour in crushed tomatoes and broth. Stir to combine. Add salt, pepper, basil, oregano, and red pepper flakes if using. Simmer for 10 minutes.

3. Optional: Use an immersion blender to puree the soup for a smoother consistency.

4. Lower the heat and slowly add heavy cream, stirring constantly.

5. Add tortellini and cook according to package instructions (about 5-7 minutes) until pasta is tender.

6. Stir in spinach and let it wilt for 1-2 minutes. Taste and adjust seasoning.

7. Serve hot with a slice of bread or your favorite toppings like Parmesan or a drizzle of olive oil.

Notes

For a dairy-free option, use coconut milk and dairy-free tortellini.

If freezing, make the soup base only and cook the tortellini fresh when serving.

For extra richness, stir in a tablespoon of butter at the end before serving.
