Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 2 cans (15 oz each) white beans (cannellini or Great Northern), drained and rinsed
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup diced carrots
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp olive oil or butter
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and freshly ground black pepper to taste
  • Optional: 1/2 tsp red pepper flakes, 1 bay leaf, fresh parsley, grated Parmesan, lemon zest/juice

Instructions

  1. Heat 1 tbsp oil in a large pot. Add sausage and cook until browned. Remove and set aside.
  2. In the same pot, add more oil if needed. Sauté onions and carrots for 5-6 minutes. Add garlic and cook another minute.
  3. Stir in paprika, thyme, salt, and pepper. Add broth, beans, and bay leaf if using. Return sausage to the pot.
  4. Bring to a gentle boil, then reduce heat and simmer 15-20 minutes.
  5. Stir in heavy cream. Simmer 5-7 minutes more until thickened. Adjust seasoning.
  6. Finish with lemon juice, parsley, and Parmesan if desired. Serve hot with crusty bread.
