Ingredients
- 1 lb Italian sausage (mild or spicy)
- 2 cans (15 oz each) white beans (cannellini or Great Northern), drained and rinsed
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 1 cup diced carrots
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp olive oil or butter
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- Salt and freshly ground black pepper to taste
- Optional: 1/2 tsp red pepper flakes, 1 bay leaf, fresh parsley, grated Parmesan, lemon zest/juice
Instructions
- Heat 1 tbsp oil in a large pot. Add sausage and cook until browned. Remove and set aside.
- In the same pot, add more oil if needed. Sauté onions and carrots for 5-6 minutes. Add garlic and cook another minute.
- Stir in paprika, thyme, salt, and pepper. Add broth, beans, and bay leaf if using. Return sausage to the pot.
- Bring to a gentle boil, then reduce heat and simmer 15-20 minutes.
- Stir in heavy cream. Simmer 5-7 minutes more until thickened. Adjust seasoning.
- Finish with lemon juice, parsley, and Parmesan if desired. Serve hot with crusty bread.
