Ingredients

1 lb ground beef

2 medium sweet potatoes, peeled and cubed

1 cup cottage cheese

1 avocado, sliced

1 jalapeño, sliced

2 green onions, chopped

2 tbsp olive oil

1 tsp chili powder

1 tsp smoked paprika

1 tsp garlic powder

1 tsp salt

½ tsp black pepper


Instructions

1. Preheat oven to 425°F (220°C). Toss cubed sweet potatoes with olive oil, salt, pepper, paprika, and chili powder. Roast on a sheet pan for 25-30 minutes, flipping halfway through.

2. While the potatoes roast, cook the ground beef in a skillet over medium heat with a bit of olive oil. Break it apart as it browns, and season with chili powder, garlic powder, smoked paprika, salt, and pepper. Cook for 8-10 minutes until browned and fragrant.

3. Slice avocado, jalapeño, and chop green onions while the beef and sweet potatoes finish cooking.

4. Assemble bowls with roasted sweet potatoes, seasoned beef, cottage cheese, avocado slices, and jalapeño. Sprinkle chopped green onions on top.

5. Serve warm, or refrigerate for a cold, make-ahead meal. Add hot sauce or lime juice if desired.

Notes

For extra crunch, add roasted pepitas or crushed tortilla chips on top.

Use thick cottage cheese to avoid extra moisture in the bowl.

Slice avocado just before serving to prevent browning.
