Ingredients
- ½ cup (1 stick) butter, softened
- ½ cup sweetened condensed milk
- 1 cup all-purpose flour
- ¼ cup cornstarch
- ¼ cup powdered sugar (plus extra for dusting)
- ½ cup shredded coconut (for coating)
- ½ teaspoon vanilla extract (optional)
Instructions
- Preheat oven to 320°F (160°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream the butter until smooth. Add the sweetened condensed milk and vanilla extract, mixing well.
- Sift together the flour, cornstarch, and powdered sugar. Gradually add to the wet ingredients, mixing until a soft dough forms.
- Roll the dough into small balls and flatten slightly into discs. Place them on the prepared baking sheet.
- Bake for 12-15 minutes, or until the edges are set but not browned.
- Let cool for 5 minutes, then roll the edges in shredded coconut and dust the tops with powdered sugar.
- Allow to cool completely before serving. Enjoy!
