Ingredients

1 cup unsalted butter, softened

0.5 cup granulated sugar

2 cups all-purpose flour

3 large eggs

Instructions

1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper. Lightly grease the paper.

2. In a large bowl, cream together 1 cup of softened butter and 0.5 cup sugar until fluffy.

3. Add 2 cups flour, 0.25 teaspoon salt, and 1 teaspoon vanilla extract. Mix until just combined.

4. Press the dough evenly into the prepared pan. Bake for 18–20 minutes, until edges are lightly golden.

5. In a separate bowl, whisk 3 eggs. Add 1 cup sugar, 0.5 cup flour, 0.25 teaspoon salt, 1 teaspoon vanilla, and 0.5 teaspoon almond extract.

6. Stir in 0.5 cup melted butter, then fold in 2 cups sweetened shredded coconut.

7. Spread the filling over the warm crust evenly. Top with 0.25 cup shredded coconut if desired.

8. Bake for 25–30 minutes, or until golden and set.

9. Let the bars cool completely in the pan before removing and slicing.

10. Dust with powdered sugar before serving.
