6 cups russet potatoes, peeled and diced

4 cups chicken broth

1/2 teaspoon dried thyme

1/4 cup green onions, chopped (for garnish)

1/2 cup crispy fried onions (for topping)


Instructions

1. Peel and dice the potatoes, dice the onion, and mince the garlic.

2. Add potatoes, onion, garlic, chicken broth, salt, pepper, and thyme to the crockpot. Stir to combine.

3. Cover and cook on low for 7-8 hours or on high for 4-5 hours until potatoes are tender.

4. Use an immersion blender to partially blend the soup for a creamy texture, leaving some chunks for body.

5. Stir in the heavy cream and butter during the last 20-30 minutes of cooking.

6. Taste and adjust seasoning if needed.

7. Serve hot, garnished with green onions and crispy fried onions.

Notes

Use russet potatoes for the best creamy texture — they break down perfectly in the crockpot.

Blend only part of the soup to maintain a balance of creamy and chunky texture.
