With a tender, moist interior and a crisp golden top, it’s the ultimate comfort food. Perfect for breakfast ideas, dinner ideas, or anytime you want a warm, satisfying bite. Bonus: it’s made with simple pantry ingredients in one bowl!

Ingredients

1 can whole kernel corn, drained

1 can creamed corn

1 box cornbread mix (like Jiffy)

1 cup sour cream

1/2 cup melted butter

2 large eggs (optional)

1 cup shredded cheddar cheese (optional)

Instructions

1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.

2. In a large mixing bowl, combine melted butter and sour cream until smooth.

3. Stir in the whole kernel corn and creamed corn.

4. Add the cornbread mix and mix just until combined. Do not overmix.

5. If using, fold in eggs and any optional ingredients like cheese or jalapeños.

6. Pour the mixture into the prepared baking dish and smooth the top.

7. Bake for 45–50 minutes, or until golden and the center is set.

8. Let it cool for 5–10 minutes before serving.

Notes

For best texture, don’t skip the creamed corn—it makes the casserole moist and rich.

To make it cheesy, stir in shredded cheddar and sprinkle more on top before baking.

This recipe can be made ahead and baked later—just store in the fridge up to 24 hours before baking.
