Ingredients

2 1/2 cups all-purpose flour

1 teaspoon salt

1 tablespoon granulated sugar

1 cup unsalted butter, cold and cubed

68 tablespoons ice water

67 medium apples, peeled, cored, and thinly sliced

2/3 cup granulated sugar

1/4 cup light brown sugar, packed

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/8 teaspoon ground allspice

2 tablespoons all-purpose flour

1 tablespoon cornstarch

1/4 teaspoon salt

1 tablespoon unsalted butter

1 egg

1 tablespoon milk or water

1 tablespoon coarse sugar


Instructions

1. In a large bowl, whisk flour, salt, and sugar. Cut in cold butter until mixture resembles coarse crumbs. Add ice water gradually until dough forms. Divide into two discs, wrap, and chill for 1 hour.

2. Toss sliced apples with lemon juice, sugars, spices, flour, cornstarch, and salt. Let sit to release juices.

3. Roll out one dough disc into a 12-inch circle and line a 9-inch pie dish. Chill while preparing the top crust.

4. Fill the crust with apple mixture, dot with butter, and arrange lattice crust over top. Seal and crimp edges.

5. Brush with egg wash and sprinkle with coarse sugar. Bake at 400°F for 20 mins, reduce to 375°F, and bake for 35–40 mins.

6. Let the pie cool on a wire rack for at least 2 hours before slicing.
