Ingredients

1 1/4 cups all-purpose flour

1/2 teaspoon salt

1/2 teaspoon granulated sugar

1/2 cup cold unsalted butter, cubed

35 tablespoons ice water

3 medium Honeycrisp apples, thinly sliced

2 tablespoons granulated sugar

1 tablespoon light brown sugar or honey

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg (optional)

1 teaspoon lemon juice

1 tablespoon all-purpose flour

1 egg, beaten

1 tablespoon coarse sugar

Powdered sugar, for dusting (optional)


Instructions

1. In a large bowl, combine flour, salt, and sugar. Add cold, cubed butter and cut it in until the mixture resembles coarse crumbs. Add ice water gradually until dough forms. Wrap and chill for 1 hour.

2. Thinly slice apples and toss with sugars, cinnamon, nutmeg, lemon juice, and flour. Let sit 10 minutes to release juice.

3. Roll out chilled dough on floured surface into a 12-inch circle. Transfer to parchment-lined baking sheet.

4. Layer apples in center, overlapping slightly and leaving a 2-inch border. Fold crust edges over apples to form galette.

5. Brush crust with beaten egg and sprinkle with coarse sugar. Optionally drizzle honey over apples.

6. Bake at 400°F (200°C) for 35–40 minutes, until crust is golden and apples tender. Rotate halfway through.

7. Cool at least 10 minutes before slicing. Dust with powdered sugar and serve as desired.

Notes

For extra flavor, sprinkle a little almond flour or graham crumbs under the apples before folding the crust.

Always keep your butter and dough cold for the flakiest crust.

Let the galette cool before slicing to help the juices thicken and avoid sogginess.
