Cinnamon Donut Bread

Description

A cozy quick bread that tastes just like your favorite cinnamon sugar donut. Buttery, fluffy, and topped with a crisp cinnamon sugar crust, it’s a perfect treat for breakfast, brunch, or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar (plus 1/4 cup for topping)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (plus 1 tsp for topping)
  • 1 cup whole milk
  • 1 large egg
  • 1/3 cup unsalted butter, melted (plus 2 tbsp melted for topping)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In a large bowl, beat together the sugar and melted butter until well mixed. Add in the egg, milk, and vanilla extract; mix until combined.
  4. Add dry ingredients to wet mixture and stir until just combined. Do not overmix.
  5. Pour batter into prepared loaf pan and smooth the top.
  6. Bake for 45–50 minutes or until a toothpick inserted in the center comes out clean.
  7. While still warm, brush the top of the loaf with 2 tbsp melted butter.
  8. Mix 1/4 cup sugar with 1 tsp cinnamon and sprinkle generously over the buttered top.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
