Description

A vibrant and healthy Cilantro Lime Chicken Rice Bowl packed with marinated grilled chicken, fluffy white rice, creamy avocado, fresh salsa, and a cooling dollop of sour cream. Perfect for weeknight dinners or meal prep.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/4 cup chopped fresh cilantro (plus extra for garnish)
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked white rice (jasmine or basmati recommended)
  • 1 avocado, diced
  • 1/2 cup fresh salsa or pico de gallo
  • 1/4 cup sour cream
  • Lime wedges, for serving

Instructions

  1. In a bowl or zip-top bag, combine lime juice, olive oil, chopped cilantro, garlic, salt, and pepper.
  2. Add chicken breasts and coat evenly. Marinate in the fridge for 30 minutes to 4 hours.
  3. Cook rice according to package instructions. Fluff with a fork and set aside.
  4. Preheat a grill or skillet over medium-high heat. Grill chicken for 5-7 minutes per side until fully cooked.
  5. Let chicken rest for 5 minutes, then slice thinly.
  6. Dice avocado and prep other toppings.
  7. Assemble bowls with rice as the base, topped with sliced chicken, avocado, salsa, and sour cream.
  8. Garnish with extra cilantro and lime wedges.
  9. Serve immediately.
