Ingredients
- 2 boneless, skinless chicken breasts
- 1/4 cup fresh lime juice (about 2 limes)
- 1/4 cup chopped fresh cilantro (plus extra for garnish)
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked white rice (jasmine or basmati recommended)
- 1 avocado, diced
- 1/2 cup fresh salsa or pico de gallo
- 1/4 cup sour cream
- Lime wedges, for serving
Instructions
- In a bowl or zip-top bag, combine lime juice, olive oil, chopped cilantro, garlic, salt, and pepper.
- Add chicken breasts and coat evenly. Marinate in the fridge for 30 minutes to 4 hours.
- Cook rice according to package instructions. Fluff with a fork and set aside.
- Preheat a grill or skillet over medium-high heat. Grill chicken for 5-7 minutes per side until fully cooked.
- Let chicken rest for 5 minutes, then slice thinly.
- Dice avocado and prep other toppings.
- Assemble bowls with rice as the base, topped with sliced chicken, avocado, salsa, and sour cream.
- Garnish with extra cilantro and lime wedges.
- Serve immediately.
