Ingredients
40 saltine crackers
1 cup unsalted butter
1 cup brown sugar
1 teaspoon vanilla extract
1/3 cup granulated sugar
1 tablespoon ground cinnamon
1 cup whipped cream cheese or sweetened whipped cream (optional)
1/4 cup powdered sugar
Instructions
1. Preheat oven to 350°F (175°C) and line a rimmed baking sheet with foil or parchment paper. Arrange saltine crackers in a single, even layer.
2. In a saucepan over medium heat, melt butter and brown sugar together. Stir constantly until boiling. Let boil for 3 minutes while stirring until thickened.
3. Remove from heat, stir in vanilla extract, and immediately pour the mixture over the saltines. Spread evenly with a spatula.
4. Bake in the preheated oven for 8–10 minutes until the toffee is bubbling.
5. Remove from oven and immediately sprinkle the cinnamon sugar evenly over the surface.
6. Let cool for 5 minutes. If using the optional cream layer, gently spread whipped cream cheese or sweetened whipped cream on top.
7. Chill in the refrigerator for at least 1 hour to set.
8. Break or cut into squares and dust with powdered sugar just before serving.
Notes
Use a rimmed baking sheet to keep the toffee from spilling during baking.
Sprinkle cinnamon sugar immediately after baking so it sticks properly.
If using a cream layer, store the toffee in the fridge to maintain structure.
