Ingredients

8 oz cream cheese, softened

0.25 cup powdered sugar

0.5 teaspoon vanilla extract

0.25 cup graham cracker crumbs (optional)

1.5 cups semi-sweet chocolate chips

1 tablespoon coconut oil or butter

0.5 cup soft caramels

1 tablespoon heavy cream

Flaky sea salt for garnish


Instructions

1. In a bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Fold in graham cracker crumbs if using, then chill the mixture for 30 minutes.

2. Once firm, scoop and roll into 1-inch balls. Freeze for 15–20 minutes.

3. Melt chocolate chips with coconut oil in the microwave in 20-second intervals, stirring until smooth.

4. Dip each cheesecake ball in the melted chocolate and let excess drip off. Place on a parchment-lined tray.

5. Chill the chocolate-coated bites until set.

6. Melt caramels with heavy cream and drizzle over the bites.

7. While caramel is still soft, sprinkle a pinch of flaky sea salt on top.

8. Chill again until caramel sets. Serve chilled or at room temperature.

Notes

Use room temperature cream cheese for a perfectly smooth filling.
