Chipotle Aioli

  • Author: Sara McKenney
  • Total Time: 5 minutes
  • Yield: 1 cup

Description

This creamy Chipotle Aioli blends smoky chipotle peppers in adobo with fresh garlic, tangy lemon juice, and rich mayonnaise. It’s the perfect condiment for tacos, sandwiches, fries, grilled meats, or veggie platters—quick to make and packed with flavor.

Ingredients

1 cup mayonnaise

1 to 2 chipotle peppers in adobo sauce

1 clove garlic

1 tablespoon lemon juice

1 pinch salt

Instructions

1. Add mayonnaise to a mixing bowl or blender.

2. Finely chop 1–2 chipotle peppers and add them with a spoonful of adobo sauce.

3. Mince or grate the garlic and add it to the bowl.

4. Squeeze in lemon juice to brighten the flavor.

5. Add a pinch of salt.

6. Blend until smooth, or stir vigorously by hand.

7. Taste and adjust: more chipotle for heat, lemon for brightness, or mayo to mellow.

8. Chill for 15–30 minutes to let flavors develop.

Notes

Use a high-quality mayo for best texture and flavor.

Let the aioli chill for at least 15 minutes to deepen flavor.

Start with one chipotle pepper and add more to reach your desired spice level.
