Ingredients

1 lb boneless skinless chicken breast or thighs, cut into bite-sized pieces

1 tbsp olive oil

3 tbsp unsalted butter

4 cloves garlic, minced

1½ tsp chili flakes

1 tbsp smoked paprika

1 tbsp soy sauce

1 tbsp honey

Salt and pepper to taste

1 tbsp chopped parsley or green onions, for garnish

8 oz rotini pasta

1 tbsp olive oil or butter

1½ cups corn kernels (fresh, frozen, or canned and drained)

2 cloves garlic, minced

1 tsp Cajun seasoning

1 cup heavy cream

½ cup grated Parmesan cheese

Salt and pepper to taste

1 tbsp chopped parsley, for garnish


Instructions

1. Pat chicken dry and season with olive oil, paprika, chili flakes, salt, and pepper. Set aside to marinate.

2. Boil rotini pasta in salted water until al dente. Reserve ½ cup pasta water, then drain and set aside.

3. In a skillet over medium-high heat, sear chicken pieces in batches until golden and cooked through. Remove and set aside.

4. In the same skillet, reduce heat to medium. Add butter, minced garlic, and chili flakes. Sauté until fragrant. Stir in soy sauce and honey. Return chicken to coat in the chili garlic butter sauce.

5. In a separate saucepan, heat oil or butter. Add corn and garlic, sauté for 3–4 minutes. Stir in Cajun seasoning.

6. Pour in heavy cream and let it simmer. Add Parmesan cheese and stir until melted. Season to taste.

7. Toss cooked pasta into the sauce. Add a splash of reserved pasta water if needed to loosen.

8. Plate pasta, top with chili garlic butter chicken bites, and garnish with fresh herbs.

Notes

Patting the chicken dry helps achieve a perfect golden sear.

Add cheese off the heat to prevent sauce separation.

Save some pasta water—it helps blend and loosen the Alfredo sauce perfectly.
