Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tbsp olive oil (for searing)
  • Salt and pepper, to taste
  • 2 tbsp butter
  • 8 oz cremini mushrooms, sliced
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp all-purpose flour
  • 1 1/2 cups chicken broth
  • 1 tsp Dijon mustard
  • 1/2 cup sour cream (room temperature)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken until golden brown. Transfer to a plate.
  3. In the same pan, melt butter and add mushrooms and onion. Cook until browned and soft.
  4. Stir in garlic and cook for 1 minute.
  5. Sprinkle flour over the mixture and stir to coat.
  6. Slowly pour in chicken broth while stirring to avoid lumps.
  7. Stir in Dijon mustard and bring the mixture to a simmer.
  8. Lower heat and mix in sour cream until smooth.
  9. Return chicken to the pan and simmer for 5–7 minutes until cooked through.
  10. Garnish with parsley and serve hot over noodles, rice, or potatoes.
