Ingredients

  • 2 large boneless, skinless chicken breasts (cut into fillets)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • ½ teaspoon red pepper flakes (adjust to taste)
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • ½ cup cherry tomatoes, halved
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken – Sprinkle salt, black pepper, and paprika over both sides of the chicken fillets.
  2. Sear the chicken – Heat olive oil and butter in a skillet over medium-high heat. Cook the chicken for 4-5 minutes per side until golden brown. Remove from pan and set aside.
  3. Sauté garlic and spice – In the same skillet, add minced garlic and red pepper flakes. Sauté for 30 seconds until fragrant.
  4. Prepare the sauce – Pour in chicken broth, scraping up any browned bits. Let simmer for 2 minutes, then add heavy cream and parmesan cheese. Stir until smooth.
  5. Add tomatoes – Stir in cherry tomatoes and let them soften slightly for about 2 minutes.
  6. Return the chicken – Place the seared chicken fillets back into the skillet. Coat with sauce and simmer for 5 minutes until fully cooked.
  7. Garnish and serve – Sprinkle fresh parsley over the top and serve hot with your favorite side.
