Ingredients

340g bowtie pasta

2 boneless skinless chicken breasts

200g Velveeta cheese cubed

1 cup shredded mozzarella cheese

3 cloves garlic minced

1 cup heavy cream

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon garlic powder

½ teaspoon paprika

2 tablespoons chopped fresh parsley or basil (for garnish)


Instructions

1. Bring a large pot of salted water to a boil. Cook the bowtie pasta until al dente, drain, and set aside with a bit of olive oil to prevent sticking.

2. Season chicken with salt, pepper, garlic powder, and paprika.

3. In a skillet, heat olive oil and 1 tablespoon butter over medium-high heat. Sear chicken for 5–7 minutes per side until cooked through. Remove and rest.

4. In the same pan, lower heat and add remaining butter. Sauté minced garlic until fragrant, about 30 seconds.

5. Pour in the heavy cream and bring to a gentle simmer. Add mozzarella cheese and stir until melted and smooth.

6. Stir in cubed Velveeta cheese. Keep stirring until it melts completely and the sauce is creamy and thick.

7. Slice rested chicken. Add pasta to the sauce and toss to coat. Add chicken on top or mix in. Let simmer for 2–3 minutes.

8. Garnish with fresh parsley or basil and serve immediately.

Notes

Use freshly minced garlic instead of jarred for the best flavor.

Cube Velveeta before adding to melt evenly and avoid clumping.

Reserve a bit of pasta water in case you need to loosen the sauce later.
