Ingredients

  • 2 boneless, skinless chicken breasts (thinly sliced)
  • 2 cups broccoli florets
  • 10 oz rotini or other short pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp fresh parsley, chopped
  • Juice of 1/2 lemon

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package directions, adding broccoli during the last 2–3 minutes. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until golden and cooked through. Remove and set aside.
  3. In the same skillet, sauté garlic for 30 seconds. Add chicken broth and deglaze the pan, simmering for 1–2 minutes.
  4. Stir in heavy cream and bring to a gentle simmer. Add Parmesan and stir until melted and smooth. Season with remaining spices.
  5. Return chicken, pasta, and broccoli to the skillet. Toss to coat in the sauce and warm through.
  6. Finish with lemon juice and chopped parsley. Serve warm with extra Parmesan if desired.
