Ingredients

400g fettuccine pasta

2 boneless, skinless chicken breasts

1 tablespoon olive oil or butter

2 tablespoons butter (for sauce)

3 garlic cloves, minced

1 ½ cups heavy cream

1 cup freshly grated Parmesan cheese

Salt, to taste

Black pepper, to taste

2 tablespoons fresh parsley, chopped (optional)


Instructions

1. Bring a large pot of salted water to a boil. Cook the fettuccine until al dente. Drain and reserve ½ cup of pasta water.

2. Season chicken with salt and pepper. In a large skillet over medium-high heat, sear chicken in olive oil or butter for 5–6 minutes per side until fully cooked. Remove and let rest.

3. In the same skillet, reduce heat to medium. Melt the butter, add garlic, and sauté for 30 seconds until fragrant.

4. Pour in the heavy cream and let simmer for 3–4 minutes to slightly thicken.

5. Stir in grated Parmesan slowly over low heat until the sauce is smooth. If needed, add reserved pasta water to adjust consistency.

6. Slice the rested chicken into strips. Add the drained pasta to the sauce and toss to coat. Fold in chicken slices.

7. Taste and adjust with more salt or pepper if needed.

8. Serve warm, topped with chopped parsley and extra Parmesan if desired.

Notes

Use freshly grated Parmesan for a smoother, creamier sauce.

Let the chicken rest before slicing to keep it juicy.

Add a splash of reserved pasta water to adjust the sauce texture if it thickens too much.
