Ingredients
12 oz rotini pasta
1 lb boneless skinless chicken breasts
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp paprika
1 tsp Italian seasoning
2 tbsp butter
3 cloves garlic minced
1 cup heavy cream
8 oz Velveeta cheese cubed
1 cup shredded mozzarella cheese
2 tbsp chopped fresh parsley (for garnish)
Instructions
1. Bring a large pot of salted water to a boil. Add rotini pasta and cook until al dente. Drain and reserve ½ cup of the pasta water. Set pasta aside.
2. Cut chicken into bite-sized chunks. Season with salt, pepper, paprika, and Italian seasoning.
3. Heat olive oil in a skillet over medium-high heat. Add chicken and sear until golden and cooked through, about 6–8 minutes. Remove from pan and set aside.
4. In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
5. Pour in heavy cream and stir gently to warm it. Do not let it boil.
6. Reduce heat to low and add Velveeta cubes. Stir constantly until melted and smooth.
7. Add shredded mozzarella and stir until completely melted and stretchy.
8. Add cooked pasta to the sauce. Toss to coat well. Add a splash of reserved pasta water if needed to thin the sauce.
