Ingredients
1 pound ground beef
1 cup sharp cheddar cheese, cut into small cubes
½ cup breadcrumbs
1 large egg
¼ cup milk
½ small onion, finely chopped
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
½ teaspoon salt
½ teaspoon black pepper
¼ cup ketchup
¼ cup BBQ sauce
1 tablespoon fresh parsley, chopped (optional for garnish)
Instructions
1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a muffin tin.
2. In a large bowl, combine the ground beef, breadcrumbs, egg, milk, chopped onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix just until combined.
3. Scoop a portion of the meat mixture into your hand, flatten slightly, and place a cheese cube in the center. Wrap the meat around the cheese and roll into a ball.
4. Place each stuffed meatball on the prepared baking sheet or in the muffin tin.
5. In a small bowl, mix together the ketchup and BBQ sauce. Spoon or brush the glaze over each meatloaf bite.
6. Bake for 20–25 minutes, or until the internal temperature reaches 160°F (71°C).
7. Remove from the oven and let rest for 5 minutes before serving.
8. Garnish with chopped parsley if desired and serve warm.
Notes
For even cooking, try to keep the meatloaf bites all the same size.
If making ahead, assemble and store uncooked bites in the fridge for up to 24 hours.
Add a pinch of chili flakes or use pepper jack for a spicy version.
